Muffin

Ingredients

300g gluten free flour( 150g Doves Farm gluten free self raising flour, 130 g Doves Farm  gluten free Bread flour, 20g Doves Farm white plain flour)

1 tea spoon milled chia seeds

1 tea spoon phsyillum husk

½ tea spoon baking powder

150 g glucose

little salt

little cinnamon

1 egg yolk

30 g melted butter

180g water

 

Place the flour with the glucose, baking powder, salt, cinnamon, phsyllium husk and chia seeds in a large mixing bowl. Melt the butter and add the water and the egg yolk in it, and mix together. Put this mixture in the flour part and beat with a wooden spoon. With the spoon put this mixture in the paper cases. For the top you can put almonds or walnuts. Bake in a preheated oven. (Around 20-25 min.)
